Celebration Popcorn

A fun twist on a classic snack! Not only is popcorn a whole grain, but it’s high in fiber and low in fat. The addition of a chocolate drizzle and coconut flakes makes this snack a little more festive without adding too much sugar. (Note: popcorn can be a choking hazard for children under four.)

INGREDIENTS

T. = tablespoon

  • 1/2 c. popcorn kernels

  • 3-4 T. coconut oil

  • Sea salt

  • 6 oz. semisweet chocolate (60-72% cacao), chopped

  • 1/2 c. unsweetened coconut flakes


> In a 3-quart (large stock) pan, pour coconut oil to cover the bottom. Add 2-3 kernels into pan, cover and heat. When those kernels pop, add the remaining popcorn, then cover and shake pan over medium heat until popping stops.

> Spread popcorn out on sheet pan(s). Lightly coat with melted coconut oil and season with salt to taste. Set aside.

> Melt chocolate over double boiler and whisk until fully melted and looks glossy. Using a spoon or whisk, drizzle the melted chocolate over popcorn. Immediately sprinkle the coconut flakes so they adhere to the wet chocolate. Allow to dry, about 10 minutes. Enjoy!

 Serving size: 3-4 cups | Makes about 16 cups popped
